Gaddi's ready to please with new chef
Gaddi's, a bastion of fine dining in the city, is turning the tables with the appointment of a new chef. Fresh from Paris, Remi Van Peteghem is now in charge of the kitchen at the Peninsula hotel's much-loved French restaurant.
Van Peteghem began his culinary career at the tender age of 16 and honed his skills at various Michelin-starred restaurants in Paris, including Carre des Feuillants and Lasserre. He earned a Michelin star last year during his tenure as chef de cuisine at Le Sensing bistro.
The chef, known for his modern take on traditional French recipes and creative cooking methods, said his biggest thrill was being able to change a diner's perception of food.
'The highest form of flattery for me is when a guest has a revelation after sampling my take on a dish, and becomes a fan of an ingredient they may never have previously enjoyed,' he said.
Also on Van Peteghem's new team is Dheeraj Bhatia, the chief sommelier appointed by Gaddi's earlier this year. The Mumbai-born wine connoisseur began his career in 2004 as a mixologist and developed a passion for wine. He has since worked in top hotels and alongside Spanish molecular chef Ferran Adri? of El Bulli.
