Trip to Italy brings lobster inspiration

Some chefs look for inspiration in traditional recipes and local markets. Others, like Vittorio Lucariello, travel farther afield.

The chef de cuisine of the Ritz-Carlton hotel's Tosca restaurant took a 10-day trip to Italy last month and visited a string of Michelin-starred restaurants. Back in Hong Kong, he has created a menu inspired by his culinary journey using seasonal ingredients.

The restaurants he visited included three-starred Da Vittorio in Bergamo, and two-starred Oliver Glowig and Il Pagliaccio in Rome. He worked and exchanged ideas with all the chefs he met. For summer, he has come up with a menu for lobster-lovers priced at HK$1,680, and available until July 31.

'Lobster has always been the No1 favourite luxury seafood for diners. We have created these new dishes for lobster aficionados, from refreshing appetisers to delectable desserts. I have picked the best-quality lobsters from Maine in the US, off the southern coast of Italy and from Normandy in France for my creations,' he said.

He has also organised a summery a la carte menu, featuring a combination of Mediterranean tastes and Asian influences.
