I was hoping these Hokkaido Royal Milk Tea langue de chat (HK$78 for a box of 10) would be as good as those by the Yoku Moku brand, which are extremely delicate and delicious. Unfortunately, the Hokkaido brand doesn't come close - the biscuit seems thicker and the filling is far too sweet. They're sold at Fresh Mart, Sogo, 555 Hennessy Road, Causeway Bay (tel: 2833 8338).

We taste-tested several yogurts when we were making one of the desserts for the recipe on page 60. A couple of them were too awful to even contemplate - too watery or acidic; others were too expensive. The favourite was the Farmers Union Greek-style natural yogurt. Made in Australia from skimmed milk, non-fat milk solids, cream and live yogurt cultures, this version lives up to its boast of 'thick and creamy'. The yogurt sells for HK$56.90 for 500 grams at Great (Pacific Place, Admiralty, tel: 2918 9986).

We also liked the Meredith Dairy natural sheep's milk yogurt, although we probably wouldn't use it in the dessert recipe. It's smooth and rich, but the aftertaste has that sheepy funk you're probably familiar with if you eat sheep's milk cheese. Made in Australia, it contains only sheep's milk and live yogurt cultures. It costs HK$65 for 500 grams at Great.
