Shady Maple Farms Pure Maple Syrup
This syrup is thick and full on the palate and almost has a creaminess to it. It has a light caramel-like flavour and a satisfying aroma with a deep colour to match. It would add a subtle flavour to cookies, but is best used on pancakes.

Epicure Pure Canadian Maple Syrup
Despite being the colour of dark caramel, this syrup has a very mild fragrance and is virtually flavourless, barely even sweet. Even worse is the thin, almost sour, finish. Whether for baking or dipping, it's a hard one to recommend.

O Organics Pure Maple Syrup 
By far the richest-tasting of those tried, the flavours are intense, reminiscent of charcoal fires and barbecues. Diehard fans might use it as a table syrup, but you are far better off baking with it.

Casino Saveur d'Ailleurs Maple Syrup 
This syrup is powerfully flavoured but it lacks the distinctive character of maple. It is incredibly sweet and the flavour is more reminiscent of caramel. A couple of teaspoons of the stuff are enough to bring on a sugar high.

Waitrose Organic Canadian Maple Syrup 
This golden-hued syrup has a mild sweetness with a wisp of maple flavour. Perhaps cooking with it, for example using it in a glaze or sauce where it needs to be reduced, might intensify its flavours. Otherwise, it can be a little underwhelming.
