'I like food that makes me feel good, which means it has to be light and healthy. I don't like anything fussy - no sauces, rich foods or anything that's difficult to digest. I like my food to be delicate and refined, but it also has to taste good. I don't eat meat, but I love vegetables and fish.

'I like Vietnamese food because it is light and refreshing, and uses a lot of coriander, mint and Asian herbs. I also love Mediterranean food because it's made with some wonderful vegetables.

'French food has a reputation for being heavy and rich, but my mother always cooked healthy, light food. It is not difficult for me to eat the way I do now. I never had to give up anything I loved because if it wasn't good for me, I didn't like it. I don't feel deprived of anything.

'I get bored eating the same thing so I love to try new restaurants and discover new kinds of food. A lot of restaurants make healthy food that still tastes good. I have a maid, and I send her to cooking classes so she can cook the way I like to eat. I also buy a lot of cookbooks.

'It's possible to eat healthy food and still enjoy what you eat. My one indulgence is Haagen-Dazs ice-cream.' Frederique Deleage is the owner of Frederique Beauty Salon in Central
