There are some interesting Southeast Asian cooking classes being taught by Angie Koong, who was born in Singapore and raised in Malaysia and Australia. The first class, covering fresh Vietnamese spring rolls, Penang assam laksa and black coconut rice, will be held on September 20. Javier Paredes from Torreon de Paredes in Chile will host a winemaker's dinner on Wednesday at Madison's Restaurant & Bar in Pacific Place. The menu includes chilled Angasi Belon oysters in glazed crab consomme aspic, paired with the Torreon de Paredes Chardonnay 2001, and roast pigeon on stir-fried apple julienne and crispy leeks, served with the 2000 merlot. Aqua on Hollywood Road is celebrating its third anniversary with a special menu of dishes created by its chefs and former guest chefs. The five-course dinner is available on September 17 and 18. It includes egg cocotte with bonito jelly and caviar, created by Sydney chef Harunobu Inukai, and raw scallop carpaccio with mustard cress and grapes by Aqua's present chef, Dick Wong. For the fish course it's Luke Mangan's (of Salt in Sydney) pan-fried barramundi with a sweet pea sauce, and a meat course of spice-dusted Barberry duck breast with red wine sauce by Aqua's original chef, Greg Bunt. Simon Berry of Berry Bros & Rudd will host a St Estephe wine dinner on September 19 at Gaia (G/F, Grand Millennium Plaza, 181 Queen's Road, Central). The menu hasn't been finalised, but guests will be drinking some excellent wines, including Chateau Cos d'Estournel 1996, Chateau Beau-Site 1989, and Chateau Montrose 1982.
