1. The 'cold-chain' approach:


On Central slughterhouse capable of processing 100,000 chickens at a time. All dressed chickens undergo chilling.


Pros:


Cheaper than fresh-slaughtering


Low risk of contamination


Less contact between consumers and chickens than fresh-slaughtering


Cons:


More job losses


Drastic change in eating habits


2. Freshly slaughtered approach:


All live poultry killed and dressed at regional slaughterhouses.


Pros:


Consumers get choice of chilled or freshly slaughtered chickens


More jobs saved


No drastic change to eating habits


Cons:


More expensive than centralised slaughtering


Higher risk of contamination


Higher risk of human contact with live poultry
