Potatoes unmasked

Scientists from the Institute of Food Research in Britain have identified previously unknown compounds in the potato also found in a herb used to lower blood pressure, according to a report published in the Journal of Agricultural and Food Chemistry. Kukoamines are natural chemicals previously found only in lycium chinense, an exotic plant whose bark is used in Chinese herbal medicine. Researchers have yet to study how stable the compounds found in the potato are during the cooking process.
