Cuisine: Vietnamese food with French presentation and garnish.

Price: $200 per person, including drinks and 10 per cent service charge.

Ambience: Most of the decor is beige wood, and the tables are quite small. Like the other restaurants on the same floor of the building, part of the seating is in an open area, giving the feeling of eating in an upscale food court.

Pros: The presentation of the food is special. Two types of fish sauce are served here: the restaurant's namesake, which has a salty, pungent flavour, and a homemade fish sauce, which has a mild sweet and sour flavour.

Cons: Staff could have been more attentive. The Vietnamese big head shrimp ($128) with homemade sauce was only average, even though it's a chef's recommendation.

Recommended dishes: We enjoyed the prawn, mango and pomelo salad ($60, right). The hollowed-out pomelo was filled with its own fruit and mango slices, lettuce, two large prawns and a refreshing, sour fish sauce dressing. Rice noodles with curry chicken in hot stone bowl ($58, left) had a sauce that was too thick, but added flavour to the plain noodles and vegetables. The Vietnamese ginger drink ($22) had a nice balance between sweetness and the spicy, strong flavour of the ginger.

What else? Nuoc Mam is part of Super Star Seafood Restaurant, which also owns Bay Phoon Town.
