Accomplished chef brings fresh taste of Alaskan seafood to town

John Sarich, culinary director of Chateau Ste Michelle, the oldest winery in Washington State in the United States, and former host of the Emmy-nominated cooking show Taste of the Northwest, is in town.

He is the author of many popular cookbooks and the founder of two successful restaurants in Seattle - Adriatica Restaurant and Dalmacija Ristoran - which opened in the 1980s.

The accomplished American chef is in Hong Kong for the 'Cold Blue Red Hot' Alaskan seafood promotion being held at the JW Marriott Hotel from July 5 to 23.

Sarich's cooking style is characterised by his humble childhood growing up in a poor American family of Croatian heritage, exposure to multiculturalism along the US west coast and years of work in refining classic recipes and exploring new techniques.

The best way to experience his cooking is at an eight-course gourmet dinner at JW's California (Level 5, 2841 3899) on July 5, which will be hosted by the chef.

The dishes will be matched by wines from Ste Michelle, which are included in the price of $1,200 a person.

Some examples of the food and wine pairings are Alaska king crab Louis salad with a sparkling Brut Chateau Ste Michelle, which has a nice, smooth effervescence that cuts through the creamy Louis dressing to complement the sweet crabmeat.

The rich and flavoursome curry asparagus soup with crispy Alaska spot prawns is recommended with an Eroica Riesling, the result of a collaboration between the chateau and famed Mosel winemaker Ernst Loosen.

Sarich's famous dishes will continue to be available on a special a la carte menu served at JW's California until July 23, and throughout the promotion, Alaskan seafood will be featured at the Fish Bar (Level 7, 28413858) and the buffet of the Marriott Cafe (Level 5, 28413906).
