Ambience: You won't mistake this place for Japanese fine dining but, then again, it makes no attempt at it.  Decor is minimal: there's a glass mural etched with fish and crustaceans, an obi hanging from one wall and a few dusty twigs in a vase. The plates of sushi wend along at a leisurely pace on the conveyor belt, alongside which there are high stools for customers. There are several tables and comfortable booths as well.
Price: About HK$125 per person without drinks and before adding service charge.
Pros: Although the food lacks the subtlety and finesse of really good Japanese restaurants, it's surprisingly decent for what it is - at least if you choose from the menu (where dishes are made-to-order) rather than taking the pre-made sushi from the conveyor belt. The sushi rice wasn't packed too tightly, as it usually is at this type of place.
Cons: Deep-fried chicken soft bones (HK$25) tasted of old oil. Roasted foie gras sushi (HK$40), which came with a  blob of caviar and  flecks of gold leaf, was unwieldy because the foie gras was too large for the amount of rice. Torched tuna with shichimi (Japanese spice mixture, HK$60) was sinewy and because it was served straight from the fridge it was too cold. Okinawa salad (HK$36) consisted primarily of iceberg lettuce.  There was a generous amount of sea urchin in the uni sushi (HK$25) but  its seaweed wrap  was tough and soggy.
Recommended dishes: Japanese tomato with sesame dressing (HK$25) was sweet, cool and refreshing. Roasted eel sushi (HK$25) was tender and succulent. Wagyu beef sushi (HK$40) was delicious: the sweetness of the raw, well-marbled meat was enhanced by minced spring onions and a little raw garlic. We also enjoyed the roasted toro sushi (HK$45) which had warm, tender fish. The grape caviar (a type of seaweed) served with the bean curd with uni (HK$32) popped delicately in our mouths.
What else? There are  some Hokkaido and Okinawan specialities on the menu.
