Top chefs join forces on new Italian restaurant

Two of the town's top chefs are joining forces for a new restaurant at an almost forgotten location.

Umberto Bombana (top photo), former chef of Toscana (which was in the now-demolished Ritz-Carlton hotel), and Austrian Roland Schuller (below) will be partners in a new Italian restaurant.

The venue they have taken over was formerly the modern Australian restaurant Opia in the Causeway Bay boutique hotel Jia.

Until recently Schuller was the kitchen boss at the Lux Manor's Aspasia, but he left that position to be executive chef of this new fine-dining venue, to be called the Drawing Room.

If you're wondering whether two is too many chefs in this new upscale ristorante's kitchen, Bombana explained that he would merely be an investor and consultant; Schuller would be the one slaving over the hot risotto pan.

Bombana is planning another restaurant in a prized spot somewhere in Central, which is tentatively scheduled to open in November - just in time for the white truffle season.

No doubt both places will be high-end venues.

You'll have to save up all week to afford to dine there on the weekend.

The Drawing Room was to have a soft opening today but is likely to start testing out its kitchen next week instead.
