Lee Jorgensen-Mayne of Dream Vintage International will host the Golden Gate Wine Opus One Challenge dinner tomorrow night at Domani restaurant in Admiralty. The famed Opus One - vintages 1996 and 1994 (in magnum) - will be offered with other Napa Valley wines such as the Far Niente Cabernet Sauvignon 2005 and Chimney Rock Cabernet Sauvignon Reserve, Stags Leap 2001, during a five-course dinner that will include homemade tagliatelle with duck ragout, mushrooms and black truffles and grilled rack of lamb with cabbage, mushrooms and crisp parmesan cheese. Pieter Malan, owner of Simonsig Wine Estate in South Africa, will host a dinner tomorrow night at ToTT's at the Excelsior hotel in Causeway Bay. The four-course dinner includes house-cured Pacific salmon with potted crab meat and shaved fennel salad served with the Simonsig Chenin Blanc 2008, cream of roast squash soup with toasted hazelnuts and sage fritter with the Simonsig Pinotage 2004, and porcini-crusted beef tenderloin with roasted garlic gratin potatoes with the winery's Redhill Pinotage 2007 and Tiara Cabernet-Merlot Bordeaux Blend 2003. Moet Hennessy Diageo is holding a wine fair entitled Tastes of New World Premier Cru on Friday and Saturday at The Residence in the Grand Hyatt Hong Kong in Wan Chai. Representatives from Cape Mentelle, Cloudy Bay, Green Point, Newton, Terrazas de los Andes and Casa Lapostolle will be on hand to discuss their wines at master classes (with subjects such as New World Cabernet Tasting and Chardonnay Around the World), wine and dine sessions (wines with Italian ham, wines with Chinese cuisine) and a wine discovery fair. Inagiku Japanese Restaurant at the Royal Garden Hotel in Tsim Sha Tsui is featuring sea urchin (far left) from Hokkaido and Iwate in Japan. Santa Lucia restaurant at the Hotel Panorama by Rhombus in Tsim Sha Tsui is serving a four-course tomato menu until the end of the month. It includes roasted heirloom tomato bisque with deep-fried scampi, Swiss beef brisket stew with root vegetables and tomato consomm?, San Mazzo tomato ravioli with lobster, and dessert of tomato cheesecake with bloody Mary sorbet and tomato honeycomb. Felix at the Peninsula hotel in Tsim Sha Tsui is pairing Deutz champagne with food in a five-course set meal available until the end of June. The dinner has dishes of foie gras with white peach and pink peppercorn paired with Cuvee William Deutz 1998, seared striped sea bass with uni and asparagus with the Amour de Deutz 1999 and roasted pigeon with Yukon potato risotto and morels served with the Deutz Blanc de Blancs 1989. Each week until the end of June, Unkai at the Sheraton Hong Kong in Tsim Sha Tsui will import a 40kg bluefin tuna from Tsukiji Market in Tokyo. It will come as a set (right, which includes tuna salad, tuna and fatty tuna sashimi and grilled fatty tuna steak), prime fatty tuna sashimi in rice bowl and teppanyaki prime fatty tuna.
