Mixologist Antonio Lai is full of surprises this Christmas. In addition to his New Year mixology menu, which includes delights such as champagne with cointreau and blackcurrant pearls, peppermint liquor jellyfish and eggnog parfait with alcoholic coffee pearls, he has also cooked up a number of other innovative drinks.  The Smoked Whiskey Coke doesn't seem much different from regular cola by appearances alone, but one taste of the cherry-wood smoke-infused drink and you'll be hooked. The Berry Whiskey with Blackcurrant Air is a lovely starter for the evening, and the Gin Popcorn is a must-try - a spoonful of the nitrogen frozen 'popcorn' in your mouth has incredible entertaining effects. Bring a camera. 
SOHO 8

For those looking for more than just the usual post-work pint, SOHO 8 offers a fun alternative. With enough friends and a high enough tolerance, you can make your way through the bar's 10-item Molecular Mixology menu. A particularly weird one that you'll either love or hate is the BLT Martini, which consists of bacon infused vodka, bloody mary mix and lettuce. Traditionalists looking for a spin on favourite drinks will like the Margarita with Sea Salt Air and Cointreau Caviar, essentially a fancy margarita without the messy salt on the rim. The Char Grilled Coconut Foam and the Grilled Pineapple Martini are both delicious, and we suggest alternating sips for a bout of summer nostalgia.  The Apple Martini with Cinnamon Foam is gorgeous and makes the perfect winter drink. 
Unbeatable Views
Sevva

Stunning views, good music and better cocktails are what make Sevva one of the hottest spots in town. One of our favourite drinks this winter is the sweet and creamy Dark Valrhona Chocolate Martini, perfect as a post-dinner dessert. A hot alternative for the cooler months is the Lychee Toddy with rum, lychee liqueur, ginger juice and a drizzle of honey from the new Some Like It Hot menu. A particularly soothing winter warmer is the Sunkissed Amaretto Cappuccino with steamed milk and hints of Amaretto and Grand Marnier. For those who are just there for the view, Sevva's mocktail selection is also impressive. We like the Green Yum Yum.
Wooloomooloo

As rooftop views go, Wooloomooloo in Wan Chai is tough to beat, with a 270-degree view that stretches from Happy Valley to Tsim Sha Tsui. The cocktail list is basic but affordable, at HK$88 for cocktails and HK$90 for most martinis. Those with a sweet tooth will like the Gold Coast cocktail, which contains vodka, mango, lychee syrup, cranberry juice and a dash of grenadine. For more classic tastes, however, the Premium Classic Martini (your choice of Grey Goose or Tanqueray with dry Vermouth) is done well. If it gets chilly on the rooftop, order an Italian coffee - the mix of Amaretto, brandy, coffee and cream will warm you right up. 
Sophisticated Spots
Blue Bar

There are a few places in town you can always count on for a decent cocktail, and Blue Bar is one of them. In addition to the usual fruity martini crowd-pleasers (we like the watermelon martini), bartender Shita Yu has come up with a new cocktail that goes down easily without making you regret it the next morning. 'Tender', which was the winning cocktail in the 'Bar Angel' competition hosted by HIM magazine and Smirnoff, contains Smirnoff vodka, Pimms #1, white grape juice, lemon juice, fresh raspberries, sugar syrup and Earl Grey tea. 
The Parlour

The Parlour lounge at the new Hullet House is a beautifully decorated venue that will look even better with age. The building, formerly the Marine Police Headquarters, dates back to 1881 and the colonial architecture, coupled with the mix of Chinese and Western d?cor, sets the tone for relaxing afternoon teas and romantic evening drinks. Dragon's Back, one of the lounge's signature cocktails, is a ladies drink with a kick that puts the tired old Cosmopolitan to shame. The drink is a fruity blend of vodka, champagne, lychee liqueur, dragon fruit and strawberries.
