Serving fine food is rewarding

What do you like most about working at corporate meetings or related events? I love the diversity of the events we handle. A successful meeting or event always begins with good food. Imagine serving perfectly prepared gourmet cuisine which makes guests happy, the sense of achievement is amazing.

What is the most unusual event you have worked at? Paralympic Boccia Championships for which we were the official hotel in August 2009. We arranged daily meals for the entire delegation. Since most of them were athletes, we arranged special dishes rich in nutrients and carbohydrates to support their strenuous training. A lot of special dietary requirements were taken into consideration as well.

How do you personally prepare yourself for a busy event? The key is to stay healthy. Attention to detail is vital in an important event so staying alert and focused is very important. I also get myself familiar with details such as the schedule, menu and special requests, and make sure I memorise them.

How important do you feel the Mice business is to your hotel? Mice business is very important to our hotel as Mice guests usually spend most of their time in the hotel. They have breakfast, lunch and dinner at the hotel, visit the spa and other leisure facilities. As an urban resort in Hong Kong we have special indoor and outdoor Mice facilities and we are committed to utilising them to their best.

What is the best way of easing the fears of a delegate or event planner who is nervous about an occasion? Communication is the key. I insist on arranging pre-event meetings with every organiser to discuss their particular needs. Then we propose solutions to overcome potential hiccups. We always have contingency plans up our sleeves. You can never be too careful.

How do you relax after a busy events schedule? Chefs work very long hours so keeping my balance in life is important. I love having fun with my wife and two daughters, and I try very hard to make sure we have quality family time or 'game nights'.
