1. Are You Going With Me? - Pat Metheny

I lived and worked in Maastricht, in the Netherlands, for a while and I used to visit a jazz bar called Take Five. I fell in love with jazz and in particular this Pat Metheny song.

2. Wicked Game - Chris Isaak

A romantic song that is very special for my wife, Fiona, and I. It brings back precious memories for us both. It has a great video with the gorgeous Helena Christensen.

3. Comfortably Numb - Pink Floyd

Simply because it has the best riff ever, I have been a fan of Pink Floyd forever. I saw their amazing concert in Lyon, in France, and the next day we cooked for them in Pierre Gagnaire's restaurant.

4. Fix You - Coldplay

I am a Coldplay fan and bought X&Y prior to a three-week holiday in the Maldives a few years ago. Every morning at six I would jog barefoot around the island with my iPod. Every time I hear the song I think about that amazing holiday with my family. Diving, sailing or doing nothing is truly the best way for a chef to wind down.

5. Stairway to Heaven - Led Zeppelin

My mum was a hippie and I grew up with awesome music such as the Stones, Led Zeppelin and Deep Purple. I think this is one of the very best ballads ever made. My mother passed away too early, and this song reminds me of her and touches me deeply every time I hear it.
