The Greenery at the Royal Garden in Tsim Sha Tsui is serving crab on its dinner buffet until the end of August. Dishes include snow crab leg robatayaki, crabmeat tortillas, and organic rice with cheese and soft shell crab tempura. Yunnan mushrooms are in season and feature on several menus until the end of the month. Celestial Court at the Sheraton Hotel in Tsim Sha Tsui offers steamed silver cod fillet with termite mushrooms (right); baked chicken in rock salt with Chinese black truffles, goose liver and barley; pan-fried Iberico pork chop with yellow porcini mushrooms; double-boiled abalone with termite mushrooms and Yunnan ham; and a two-course South African lobster dish (boiled lobster head and claw in soup with chanterelles, and pan-fried sliced lobster meat with chanterelles on steamed egg white). At Toh Lee in the Hotel Nikko, mushrooms feature in double-boiled cordyceps sinensis with conpoy, wolfberries, matsutake mushrooms and winter melon; sauteed porcini with shredded beef, gravy and pancake wraps; sauteed chanterelles, porcini and catathelasma ventricosum with chilli sauce; deep-fried porcini, sarcodon aspratus, diced abalone and mashed taro with Portuguese sauce; and braised sarcodon aspratus with goose feet and mushrooms in abalone sauce.
