Lime

Limes are small citrus fruits with green skin and flesh. Their sour juice is a popular addition to drinks and cuisines that require a sharp kick to counterbalance spice, such as Mexican and Thai

Summer salad

Ingredients (serves 4)

2 firm mangos, peeled and cut into chunks

2 limes

1 small cucumber, skin partially peeled so it looks striped, cut into chunks

1.5cm piece of fresh ginger, grated

1 tsp brown sugar

1 tbsp soy sauce OR balsamic vinegar

1 avocado

200g cooked prawns (if you use soy sauce) OR feta cheese (if you use balsamic vinegar)

Small bunch coriander, leaves only

1 mild red chilli, deseeded and finely chopped (optional)

Follow the steps

Place the mango and cucumber in a bowl.

Juice one lime into a small bowl. Cut the other lime in half, then cut each half into thin wedges. Cut the skin away - do it over the juice bowl so you don't waste any juice - then add the lime wedges to the mango and cucumber with the ginger.

Mix the lime juice, sugar and soy sauce/balsamic vinegar together and pour over fruit. Peel the avocado and cube it, being sure to mix it well in the limey dressing.

Crumble over the feta or add the prawns, scatter with coriander leaves and chopped chilli, and stir gently to combine.

Lime-papaya smoothie

Ingredients (makes 4)

1 medium papaya

3 limes (juiced)

4 tbsp granulated sugar

iced water

Follow the steps

Peel and deseed the papaya, then chop into cubes. Blend or liquidise the fruit with some ice water, adding as much water as necessary to create a smooth liquid.
