Christopher Poron of French truffle exporters Plantin will be at the black truffle and Domaine Jacques Prieur wine dinner at Amber (above) in the Landmark Mandarin Oriental on February 23. The dinner includes Mieral Bresse poulard (breast with black truffles, the leg minced and steamed with winter root vegetables and Albufera emulsion) paired with Corton Bressandes Grand Cru 2005; fregola sarda risotto with Alsatian bacon and black winter truffles carbonara-style with the Clos de Vougeot Grand Cru 2005; and burrata di Corato whipped with black truffles served with the Volnay Santenots Premier Cru 1990. Caprice restaurant at the Four Seasons hotel in Central is featuring black winter truffles on four- and eight-course tasting menus available only on February 21. Christopher Poron will also be there to answer questions about truffles. The four-course menu (HK$1,280 plus 10 per cent or HK$1,980 with a wine pairing) includes wild salmon confit with green lentil coulis and black truffle cream; and Capelin pork belly with Perigord black truffle, fondant cabbage, white bean and carrot garbure. The eight-course tasting menu (HK$2,580 plus 10 per cent, or HK$3,980 with a wine pairing) has dishes of langoustine fricassee with wild watercress custard, green lentils and black truffles; milk-fed veal with young spinach leaves and black truffle in Madeira sauce; and sandlewood crmee brulee with fresh cherries, griottes sorbet and black truffle. Winemaker Axelle Araud of Moet & Chandon will host a dinner on February 23 at the Harbourside function rooms of the InterContinental Hong Kong in Tsim Sha Tsui. The five-course dinner includes oven-baked lobster with baby spinach and curry sabayon paired with the Moet & Chandon 2002; cream of chestnut soup with fresh cheese and black truffle crouton with the winery's Rose 2002; roast duckling with orange and baby beets with the vintage 1992; and the cheese course with the vintage 1975. Gaylord in Tsim Sha Tsui is featuring lamb dishes on its menu until the end of the month. The menu has dishes of shammi kebab (minced lamb and yellow lentil patties); lamb chops marinated with star anise and pomegranate juice (below); keema kaleji (minced lamb mixed with liver and dried green chillies); and basmati rice with lamb and Indian spices.
