Finnish chef recreates a menu fit for a princess - for one night only

Earlier this year, the celebrity chef of Scandinavian restaurant Finds, Jaakko Sorsa, got a call during a busy lunch shift. At the other end of the phone was the Japanese Embassy in Finland inviting Sorsa to prepare a dinner for Princess Takamado and her guests, using Japanese ingredients and prepared with a Finnish twist.

'I've been with Finds for seven years. Instead of just a Finnish twist, it's more a case of doing it my own style, the Finds way,' Sorsa said.

The mission started with a five-day trip to Tokyo, where Sorsa scouted the fish market for ingredients.

The result was a six-course dinner including Finnish sashimi, king crab leg confit, wagyu beef fillet and bite-sized, sugar-coated doughnuts with blueberry filling, which Sorsa said was his grandmother's recipe.

'When we pick fresh blueberries, we always eat them dipped in vanilla sauce,' he said.

So what was the princess' favourite dish? 'The plates of seafood all came back clean. That's the best compliment a chef can get.'

Sorsa recreated the menu on Wednesday night for a press preview. He will be preparing the menu for one night only on June 23 at the Tsim Sha Tsui restaurant.

When asked why it would only be a one-night affair, Sorsa replied: 'Well, you have to keep it royal.'
