G/F, 208 Hollywood Road, Sheung Wan.  Tel: 2549 0208. One of the most talked-about additions to the Hollywood Road nightlife scene is a former meat storage warehouse transformed into a slice of New York cool  by a team who were named the best young designers of 2004 by Wallpaper. Recommended: the extensive wine and cocktail list.
Alfie's by Kee
M18-19, M/F Prince's Building, 10 Chater Road, Central. Tel: 2530 4422. With its dark wood, dimmed lights and leather lounges to sink into, Alfie's more than matches the Dunhill boys' club aesthetic.  Recommended: Pimm's by Kee and the lemon grass martini.  
Biergarten German Bar and Restaurant
G/F, 5 Hanoi Road, Tsim Sha Tsui. Tel: 2721 2302. This convivial, raucous institution has an inviting if kitschy atmosphere. Stick to the German beers and usual cocktails.  The sausages are pretty good. Recommended: the Thai Sunrise (HK$68), a twist on the tequila sunrise.
The Chapel 
27 Yik Yam Street, Happy Valley. Tel: 2834 6565. Whether for a pre-race warm-up or post-win celebration, The Chapel's broad range of beers will satisfy anyone in Happy Valley. Recommended: The Chapel's curries  are  a great way to soak up the booze after  the races.  
Cocky Bar
18/F The One, 100 Nathan Road, Tsim Sha Tsui. Tel: 2724 6388. This 18th-floor alfresco terrace bar with panoramic views of the Hong Kong skyline and Kowloon is bringing a bit of class to Tsim Sha Tsui's nightlife. Recommended: the martini list, particularly the sour apple martini (HK$90) with a crisp bite of fresh green apple.
Dada Bar and Lounge
2/F The Luxe Manor, 39 Kimberly Road, Tsim Sha Tsui. Tel: 3763 8778. Bold leather couches and dim lighting make for a swanky and impressive destination in Tsim Sha Tsui. Recommended: the eponymous Dada cocktail includes pomegranate, light rum and lime, with a touch of spearmint.  
Envie
G/F, 48 Wyndham St, Central. Tel: 2522 8318. A breezy, inviting space in neutral and beige tones that feels intimate, the bar has a wine-heavy, girly-cocktail dominated drinks list balanced by a few heavy duty drinks such as the Contemporary Fashioned (a new twist on the Old Fashioned with 23-year-old Ron Zacapa rum). Recommended: Lambloch Estate's South Australian Shiraz (HK$52).
Felix
28/F The Peninsula, Salisbury Road, Tsim Sha Tsui. Tel: 2315 3188. This Philippe Starck-designed feast for the eyes is one of Hong Kong's best-known bars, with floor-to-ceiling windows providing impressive views over Hong Kong Island and Kowloon. Recommended: Felix arguably offers the best gin and tonic (HK95) in town.
Flutes
27 Elgin Street, SoHo, Central. Tel: 2810  0005. What could beat an unpretentious atmosphere in a prominent SoHo spot? The extensive drinks list that includes many champagnes, wines and cocktails is a strong lure but the wines are generally a safer bet than the cocktails. Recommended: the Domaine Magellan Merlot 2007 (HK$70).
The Globe 
Garley Building, 45-53 Graham Street, Central. Tel: 2543 1941. The Globe is a smart English pub, with one of the widest and best selections of beers in Hong Kong, as well as excellent pub fare. Recommended: Typhoon T8, which is brewed on Lantau Island.
 Goldfinch Restaurant
13-15, G/F Lan Fong Road, Causeway Bay. Tel: 2577 7981. Made internationally famous by its role in a Wong Kar-wai film, it has been serving Hong Kong-style diner classics since 1962. It has kept its charms and provision of privacy in comfortable booths for all that time. Recommended: any of the classic cocktails at HK$39 each.
LATITUDE 22
G/F, 40 Staunton Street, Central. Tel: 2522 8329. Unstylish but somehow inviting and cozy in atmosphere, the bar offers a fairly standard mix of cocktails, beers and wines.  Beer drinkers will enjoy the Kronenbourg Blanc. Recommended: the Brazilian caipirinha, made with real cachaca (HK$58).
Le Boudoir
B/F, 65 Wyndham St, Central Tel: 2530 3870. This atmospheric basement bar modelled on 19th-century Parisian salons is dark and lovely, with one of the best cocktail menus in town: Recommended: the Unconventional martini (HK$95), blending gin, lemon juice, mint and kaffir lime syrup.  
Lily 
6/F LKF Tower, 33 Wyndham St, Central. Tel: 2810 6166. This slice of old-school cool comes courtesy of the people who brought us Volar and Halo. Recommended: the Elderflower Paloma, combining tequila, lime, grapefruit and soda water infused with elderflower.
The Living Room
6/F W Hotel, Kowloon Station. Tel: 3717 2222. It's easy to kick back and feel right at home in this sprawling, beautifully designed bar complete with board games and bookcases - just help yourself. Recommended: the awesome lychee martinis.  
Ozone
118/F Ritz-Carlton Hong Kong, International Commerce Centre, 1 Austin Road West, Kowloon. Tel: 2263 2263. The highest bar in the world doesn't disappoint with its bird's-eye view of the city. Prices here are as steep as the venue, but then you're paying for that view. Recommended: wines are the main attraction, with a choice of several by the glass (HK$90-HK$170).  
Phonograph
2 Austin Avenue, Tsim Sha Tsui, Kowloon.  Tel: 2730 6622. Phonograph isn't a music venue but is one frequented by musicians. Staff don't mind plugging your iPod into the sound system while you sip a Yakult cocktail. Recommended: any of the Yakult cocktails.   
Saint-Germain
1A Wong Nai Chung Road, Happy Valley.  Tel: 2836 6131. The venue offers European sophistication and a brasserie atmosphere for drinking a limited but good selection of mostly French wines by the glass. The barman can whip up cocktails by request and the snacks are tempting. Recommended: a glass of the Macon Villages 'Le Chamvile' 2009 (HK$80).
 Sevva
25/F Prince's Building, 10 Chater Road, Central. Tel: 2537 1388. Indoor and (spacious) outdoor seating gives Sevva a nice edge, particularly given the incredible skyscraper views. Recommended: at Sevva it's the desserts which will steal your heart. 
Shore
3/F-4/F The L Place, 139 Queen's Road Central. Tel: 2915 1638. Spread over two floors, Shore showcases an interesting dual-concept theme: upstairs is the Onshore fine-dining area, downstairs is the Offshore bar with a 1,800-sq-ft terrace that exudes warmth and originality. Recommended: put your choice in the hands of mixologists with the Surprise Me! (HK$90) cocktail.
Sky Lounge
18/F Sheraton Hong Kong Hotel & Towers,  20 Nathan Road, Tsim Sha Tsui. Tel: 2369 1111. A welcome relief from the bustle below, the bar has a glamorous 1950s feel and is an elegant eyrie to recharge batteries - go for either self-served wines from the Enomatc machine or with classic martinis and Chivas Regal 18. Recommended: the kiwi martini ((HK$95), a show-stopping blend of vodka, kiwi liqueur and kiwifruit syrup. 
Sugar 
32/F East Hotel, 29 Taikoo Shing Road.  Tel: 3968 3968. One of the few bars in the area to have an outdoor terrace, the chic Sugar at the boutique East Hotel is a rare escape from the city's Central-Causeway Bay hip-zone. Daybeds allow you to relax in its lap of laziness, while its view takes in most of the city's skyline. Recommended: the music, with resident DJs Eric Byron and P. Grant spinning lounge, soul, electro and chill-out.
Tazmania Ballroom 
1/F LKF Tower, 33 Wyndham Street, Central. Tel: 2801 5009. The coolest, sleekest pool hall in Hong Kong, this lounge bar is straight out of Hoxton. Recommended: the 'F*** Me Up', a cocktail with a serious alcohol kick, including amaretto, Malibu and vodka.
Vida Rica
2/F Mandarin Oriental Macau, Avenida Dr Sun Yat Sen, Outer Harbour, Macau. Tel: (853) 8805 8928. A chic, sophisticated bar with views over the Macau Tower and Nam Van Lake, the bar serves manly cocktails designed by a New York mixologist and has great nooks and crannies to hide in. Recommended: the Lagavulin 25 years cask strength single malt whisky (HK$490 per shot).
