A slice of Mexico
A quesadilla is a Mexican sandwich using tortillas, which are made from flour or corn and look like big, soft pancakes. It can be served as an appetiser, snack or as a light lunch.
This is a basic recipe, but you can add other ingredients such as chicken, sweetcorn, red peppers, mushrooms or ham.
Equipment you will need
Non-stick frying pan
Ingredients (makes 4 pieces)
2 flour tortillas
1 tomato, cut into small cubes
1/2 avocado, peeled, cut into small cubes
1/4 small red onion, peeled, chopped
1 tablespoon lemon juice
1/2 teaspoon Tabasco sauce
75g Cheddar cheese, grated
1 teaspoon vegetable oil
1 Place the tomato, avocado, onion, lemon juice and Tabasco sauce in a large bowl, mix with a spoon.
2 Put one tortilla on a plate. Brush a little oil over the top. Turn it over.
3 Spread the tomato and avocado mixture on the tortilla and sprinkle cheese on top.
4 Cover with the other tortilla. (You can also put the mixture on one half of the tortilla and fold it over, like a taco.)
5 Brush a little oil on top.
6 Heat a non-stick frying pan over low to medium heat.
7 Gently place the filled tortilla in the frying pan. Cook for 3-4 minutes or until the bottom of the tortilla is golden brown.
8 Carefully turn the quesadilla over with a spatula and cook for 2 minutes.
9 Remove from heat. Place the quesadilla onto the chopping board, and cut into 4 wedges with a knife.
10 Serve immediately.
