2/F Amber Lodge, 23 Hollywood Rd. Tel: 2805 8388. Whisky transcends all notions of class and the people behind Angel's Share have put this lovely drop back in its rightful place, with more than 100 varieties on offer. Recommended: the 20-year-old Macallan.
Butler
5/F Mody House, 30 Mody Road, TST. Tel: 2724 3828. A Tokyo-style drinking den favoured by Japanese customers, the bar is intimate and staffed by bartenders who can make cocktails that match your mood. Recommended: the 10-year original cask-aged Laphroaig whisky (HK$80). 
Dandy 
18 Lyndhurst Terrace, Central. Tel: 2544 1978. This bar is hip, ambient and relaxed. The classic cocktails are good, as is the music. Recommended: Strawberry Fields (champagne, Cointreau, fresh strawberries, HK$90).
Dharma Den
2/F The Workstation, 43 Lyndhurst Terrace, Central. Tel: 9813 1579. A great terrace with an outdoor grill in a Tibetan-themed bar makes up for a lacklustre drinks list. Recommended: the 12-year-old Glenfiddich (HK$75). 
Envie
G/F, 48 Wyndham Street, Central. Tel: 2522 8318. A breezy, inviting space in beige tones that feels intimate. The bar has a wine-heavy drinks list balanced by a few heavy duty drinks such as the Contemporary Fashioned (a twist on the Old Fashioned with 23-year-old Ron Zacapa rum). Recommended: Lambloch Estate's South Australian Shiraz (HK$52).
Felix 
28/F, The Peninsula, Salisbury Road, Tsim Sha Tsui. Tel: 2315 3188. This Philippe Starck-designed feast for the eyes is one of Hong Kong's best-known bars, with floor-to-ceiling windows providing impressive views over Hong Kong Island and Kowloon. Recommended: gin and tonic (HK95). 
Flutes 
27 Elgin Street, SoHo, Central. Tel: 2810 0005. What could beat an unpretentious atmosphere in a prominent SoHo spot? The extensive drinks list that includes many champagnes, wines and cocktails is a strong lure but the wines are generally a safer bet than the cocktails. Recommended: the Domaine Magellan Merlot 2007 (HK$70).  
Hive 101
Shop A, 101/F International Commerce Centre, 1 Austin Road West, Kowloon. Tel: 2972 2666. Once found, this quiet bar with its glorious views is a tranquil spot for conversation. Cocktails blend Canadian ice wines with Japanese spirits and plenty of fruit and the wine and shooters are pretty good too. Recommended: the blend of ice wine, Yoichi whisky, cranberry juice and lemon called a Maple Route.
Hush
G/F, 2 Gleanealy, Central. Tel: 2537 2281. This chill-out bar away from the hubbub of nearby Lan Kwai Fong and Wyndham Street offers a casual place to unwind. Recommended: the impressive molecular cocktails such as Mr Grey (HK$110), a refreshing martini made of crushed cucumber, apple juice, Earl Grey tea, gin and elderflower syrup. 
Kila
Upper Basement, 79 Wyndham Street, Central. Tel: 2522 8118. Hong Kong is not short of Irish bars, but the owners of Kila have taken a different approach: they've done their best to actually feel Irish. Recommended: the Guinness, of course. 
Le Tambour
52A Peel Street, Central. Tel: 3114 6320. French decor, wine and patrons make for a casual spot for wine lovers; the venue also occasionally hosts jazz nights. Recommended: from a boutique winery list, we liked sweet gewurztraminer from Vallee Noble Seppi Landmann (HK$70). 
Linguini Fini
G/F The L Place, 139 Queen's Road Central. Tel: 2857 1333. This dark bar with booths that act like time machines is sure to be the cause of many an entertainingly lost night. The cocktails are all HK$58. Recommended: the bourbon, lemon and mint combo named Whiskey Smash.
The Living Room
6/F W Hotel, Kowloon Station. Tel: 3717 2222. It's easy to kick back and feel right at home in this sprawling, beautifully designed bar complete with board games and bookcases - just help yourself. Recommended: the awesome lychee martinis. and the HK$198 deal for all the New World wine that you can drink. 
Medusa
Basement, 49 Staunton Street, Central. Tel: 2858 3129. Bring your own party to possibly Hong Kong's smallest bar with its decor theme of severed heads. Standard and signature cocktails are all well-made and the wine list is brief but interesting. Recommended: the soup bowl-sized lemon daiquiri (HK$78).  
Pastis
G/F, 65 Wyndham Street, Central. Tel: 2537 5702. Bars don't get much more French than this temple to anise-based drinks. As well as pastis, there is an interesting selection of French spirits. Recommended: the Pastis Henri Bardouin (HK$70).
The Pawn 
62 Johnston Road, Wan Chai. Tel: 2866 3444. Relax at the beautifully restored historic building with natural light, low leather couches and a beautifully calm atmosphere. Recommended: Leffe Brune. 
Phonograph
2 Austin Avenue, Tsim Sha Tsui, Kowloon. Tel: 2730 6622. Phonograph isn't a music venue but is one frequented by musicians. Staff don't mind plugging your iPod into the sound system while you sip a Yakult cocktail. Recommended: any of the Yakult cocktails - drinking on an empty stomach never felt so healthy.
PJ Murphy's
Basement, Imperial Hotel, 32 Nathan Road, Tsim Sha Tsui. Tel: 2782 3383. A friendly crowd and helpful, pleasant staff create a calm atmosphere in hectic Tsim Sha Tsui. The bar offers excellent spirits, limited but good wines and an interesting list of beers, perhaps a better choice than the cocktails. A good choice for a laid-back evening. Recommended: the Casa La Joya Merlot 2009 (HK$81).
Psychic Jack
1/F, 30-32 Wyndham Street, Central. Tel: 2868 6102. This deliciously decadent addition to the Wyndham Street scene is all comfortable relaxed hues, while the Central nightlife bursts into life around you. Recommended: the lemon drops (HK$76) and the Long Beach Iced Tea (HK$102).
 Ra Restaurant and Lounge
Shop 1, G/F Wing On Plaza, 62 Mody Road, Tsim Sha Tsui East. Tel: 2721 3600. The Egyptian theme includes the smell of shisha as much as the artefacts used for decor. The drinks may be underwhelming, bar some minty cocktails, but the place is unpretentious and friendly. Recommended: the pint-sized lychee mojito (HK$95).
Racks MDB
M88, 7/F, 2-8 Wellington Street, Central. Tel: 2868 3762. An East Village-style pool bar, this members' club remains the coolest place in town to shoot a few balls. Recommended: when in a Manhattan-style bar, one must order the Manhattan. 
Salon de Ning
B/F The Peninsula, Salisbury Road, Tsim Sha Tsui. Tel: 2315 3355. Hidden away in the basement of the Peninsula is this glamorous slice of 1930s Shanghai, inspiring a feeling of intrigue and mystery. Recommended: the Manhattan (HK$115), using Jim Beam rather than rye whiskey.
Tazmania Ballroom
1/F LKF Tower, 33 Wyndham Street, Central. Tel: 2801 5009. The coolest, sleekest pool hall in Hong Kong, this lounge bar is straight out of Hoxton. Recommended: the 'F*** Me Up', a cocktail with a serious alcohol kick, including amaretto, Malibu and vodka.
Vibes
5/F Mira Hotel, 118 Nathan Road, Tsim Sha Tsui. Tel: 2368 1111. The secluded alfresco bar is very relaxed. A few twists on classic cocktails enliven a list that is heavy on whiskies but also includes premium vodkas and rums. There are also shisha and cigar menus. Recommended: the S&M (Scotch and mint, HK$90).
Vida Rica
2/F Mandarin Oriental Macau, Avenida Dr Sun Yat Sen, Outer Harbour, Macau. Tel: (853) 8805 8928. A chic, sophisticated bar with views over the Macau Tower and Nam Van Lake, the bar serves manly cocktails designed by a New York mixologist. Recommended: the Lagavulin 25-year cask-strength single malt whisky (HK$490 per shot).
