Michelin chef Paco Roncero cooks up new dishes at View 62

It's been about six months since Paco Roncero was last in Hong Kong to open his View 62 revolving restaurant in Wan Chai. The Madrid-based, Michelin two-starred chef returned on Tuesday to make changes to the menu.

"Hong Kong people enjoy food and, more importantly, they like to learn about other cultures through food," he said while cooking up a selection of his new dishes at the restaurant on top of the Hopewell Centre.

"My cuisine is based on the produce and its flavours. Those are in fact the sources of my inspiration. I work around them with different techniques."

The 17-course tasting menu featured dishes similar to those he serves back home in his La Terraza del Casino restaurant. They included frozen gazpacho with king crab, wagyu beef confit with pear and coconut, and beetroot and raspberry sponge with yoghurt.

Although he was busy in the kitchen, Roncero took time to greet the dinner guests.

"Our cuisine is nouveau rather than molecular. Molecular is everything that you do to transform an ingredient, but we try to be creative in presenting our food," he said.
