Dynasty restaurant at the Renaissance Harbour View hotel in Wan Chai is featuring a selection of dried seafood dishes until April 23. On the menu are dishes of chilled iceplant salad with diced sea cucumber; stir-fried red bird’s nest with crabmeat; deep-fried fish maw and mashed shrimp roll; and braised sliced abalone with dried pomelo peel and Chinese mushrooms. The Burgundy Wine Company and chef David Lai of Neighborhood in Central will have a dinner on March 29 featuring fine Burgundy wines. The dinner at Neighborhood is HK$998 plus 10 per cent and includes asparagus and bone marrow risotto paired with the Savigny-Les-Beaune Premier Cru Vergelesses 2012 Domaine Michel Gay, and the Chambolle Musigny Premier Cru 2013 Domaine Lechenaut; and roast pigeon with green peas with the Morey Saint Denis Premier Cru La Riotte 2007 Domaine Perrot Minot. Yun Yan Sichuan restaurant in Causeway Bay is featuring light spring dishes until the end of April. The selection includes marinated chilled chicken with fermented rice in chive and chilli sauce; quinoa with lettuce asparagus (celtuce) and crispy yellow beans in black vinegar; shredded beef with sweet bean paste and pancakes; braised jumbo pork balls; and crispy spare ribs with rose syrup and dried chillies. Nate Green of Rhoda restaurant in Sai Ying Pun and guest chef Richard Turner from Hawksmoor in London are collaborating on a nine-course beef- and seafood-focused barbecue menu that will be served at Rhoda on April 5 and 6. The dinner is HK$998 and includes braised wild Hereford short ribs on toast with Sturia caviar; baked oysters with bone marrow jus; roast scallops with fennel butter; chopped steak with olive oil and lemon; and charcoal-grilled tomahawk steak.
