Entrepreneur Mary Schroeder started up dessert company Happy Cow after 14 years working for hedge funds and building investment experience in distressed debt and Asian private equity. Two years ago she quit her day job to work full-time growing Happy Cow in Asia.

The company’s Hong Kong-produced, vegan, halal-certified and hand-crafted ice-cream made with coconuts – talk about guilt-free! – is now sold in major supermarkets and health food stores. Schroeder talked to us on #FacebookLive on Friday at the first physical Happy Cow store, on the campus of the University of Hong Kong.
