Cuisine Cuisine at the Mira hotel in Tsim Sha Tsui is serving Yunnan mushrooms until September 17. The à la carte selection includes baked lobster with fresh porcini, portobello mushrooms and black pepper; flamed chicken with morels and onions; sauté M9 Australian wagyu beef chuck with black termite mushrooms and garlic; and winter melon soup with matsutake, sliced conch and honey locust fruit. Dot Cod restaurant in Central is featuring Italian Ceretto wines at a dinner on August 5. The five-course dinner is HK$888 plus 10 per cent and includes whole roast quail stuffed with fennel, pine nuts and sausage with creamy pecorino polenta, served with the Ceretto Langhe Rosso Monsordo 2014; and Ligurian seafood stew with the winery’s Barbaresco 2013 and Barolo 2012. Tin Lung Heen at the Ritz-Carlton in Kowloon is serving Chateau Angelus grand cru classé on a wine dinner that’s available until the end of September.

The six-course Chinese dinner is HK$2,888 plus 10 per cent and includes wok-fried lobster with spring onions paired with the Domaine Corinne and Jean-Pierre Grossot Chablis 1er Cru Les Fourneaux 2014; while the main course of pan-fried beef fillet with black pepper and matsutake mushrooms is served with the No 3 d’Angelus Saint Emilion Grand Cru 2008 and Le Carillon d’Angelus Saint Emilion Grand Cru 2012; for an additional HK$680 the wine is upgraded to Chateau Angelus 1er Grand Cru Classé A 2014. On its latest culinary tour of Japan, Nobu restaurant at the InterContinental hotel in Tsim Sha Tsui is featuring the famed Kobe beef. The seven-course meal starts with taco santen mori with shiso, wasabi and jalapeno (above); and has a main course of roasted rib eye with leek ash and anticucho miso.
