Didier Depond, president of Champagne Salon and Champagne Delamotte, will host a dinner on Tuesday at T'ang Court at the Langham Hotel in Tsim Sha Tsui. The dinner, which is HK$1,688 plus 10 per cent, includes pan-fried spotted garoupa with spring onions (below left) paired with the Delamotte Blanc de Blancs vintages 1999 and 2002; and stewed fresh lobster in chicken broth with the Salon 1999. The white truffle season is still going strong. At Nicholini's at the Conrad hotel, dishes include potatoes and Castelmagno cheese gnocchi with hazelnut oil and white truffle; grilled veal tenderloin with truffle sabayon, green asparagus and white truffle; and caramelised onion tortelli with parmigiano reggiano fondue and white truffle. At Grissini at the Grand Hyatt, chef Andrea Faire from Piemonte, one of the regions where the white truffle is found, is using the fungus in dishes of taleggio cheese fonduta with Jerusalem artichoke cake and egg yolk emulsion; and 40 egg yolk tagliolini with Italian butter and parmigiano reggiano (above). Va Bene in Central is serving white truffle dishes until the end of the month. The menu includes veal tartare with quail egg, sweet tomato and white truffle shavings; acquerello risotto with pumpkin, melted fontina, aged balsamic and white truffles; and honey-glazed duck breast with Jerusalem artichoke flan, raspberry vinegar and white truffles. Man Wah at the Mandarin Oriental in Central, is featuring white truffle dishes for the first time. Dishes include braised e-fu noodles with white truffles, lobster and cream sauce; pan-fried scallops with white truffle, scrambled duck egg and crab coral sauce; and braised rice casserole with white truffle, wild fungus and dried seafood.
