restaurant in the IFC mall in Central is serving snake soup and warming casserole dishes until the end of January. Its snake soup uses five types of snake, such as Chinese cobra and the banded krait. Starting on January 2, at the Hotel Nikko in Tsim Sha Tsui will be featuring Perigord black truffles on the dinner buffet. The menu includes poached chicken bologna with black truffles; grilled US beef cubes with spleen mushrooms and black truffles; steamed grouper fillet with ham and black truffle; steamed egg custard with foie gras and black truffle; and wild mushroom terrine with black truffle. The dinner buffet is HK$468 plus 10 per cent for adults (HK$338 for children) from Monday to Thursday and HK$518 plus 10 per cent (HK$368 for children) from Friday to Sunday and on public holidays. restaurant at the Hyatt Regency in Tsim Sha Tsui will be serving Bresse chicken dishes next month. These special chickens, which have an AOC (appellation d'origine controlee) status, are made into dishes of Bresse chicken consomme en croute with foie gras and vegetables; Bresse chicken vol-au-vent with chervil salad; Bresse chicken with black truffle in supreme soup; and roasted Bresse chicken for two. at the Kowloon Hotel in Tsim Sha Tsui is featuring bird's nest on the dinner buffet starting on January 2. Guests can taste dishes of crab congee with bird's nest; bird's nest and Alaskan crab meat wrapped with smoked salmon; baked grouper fillet stuffed with bird's nest and scallop mousse; slow-cooked chicken supreme stuffed with chestnut, broccoli mousse, bird's nest and mango; and French puff with bird's nest and seasonal fruits.
