Hong Kong seasonal menus are big on white asparagus

From May 26 to 30, FoFo by El Willy in Lan Kwai Fong is serving a 10-course wild seafood dinner for HK$788 plus 10 per cent. The menu includes cured salmon with beetroot and watermelon; stracciatella di burrata with mixed tomato and white tuna in escabeche (above); and warm lobster ceviche with aji amarillo, coriander and red onions. Hugo's at the Hyatt Regency in Tsim Sha Tsui is serving seasonal white asparagus through May, in dishes such as steamed white asparagus with hollandaise sauce (below); and white asparagus carpaccio. Bookings: 3721 7733

Also featuring white asparagus is Sabatini at the Royal Garden in Tsim Sha Tsui. Until the end of May, dishes include white asparagus velouté with lobster and lobster reduction; and white asparagus with soft-boiled eggs, pancetta and sage on parmesan fondue. Bookings: 2733 2000

Gert de Mangeleer, chef and owner of the Michelin three-star Restaurant Hertog Jan in Belgium, will be guest chef at Amber restaurant at the Landmark Mandarin Oriental from June 8 to 10. The menu includes marinated langoustine with pickled beetroot, raspberry and vanilla; and stroganoff-style wagyu beef with marinated mushrooms and spicy peppers. Chefs from the Grand Hyatt Seoul will be cooking for lunch and dinner buffets at the Café at Grand Hyatt in Sha Tin until May 31. Dishes include ginseng chicken soup; and grilled pork belly with lettuce and sesame leaf. The lunch buffet is HK$328 plus 10 per cent (HK$164 for children) Monday to Friday and HK$408 (HK$204 for children) on Saturday, Sunday and public holidays. Stewed wagyu and onion at Sagano
