Lobster, Spanish and French specials at Hong Kong and Macau restaurants

Hugo's at the Hyatt Regency in Tsim Sha Tsui is featuring Brittany blue lobster dishes throughout July. Guests can taste dishes of blue lobster in bouillon with cherry tomatoes and broad beans, poached blue lobster with black truffle sabayon, and blue lobster salad with poached quail egg, white asparagus and peach purée. Promenade Restaurant at the Harbour Plaza Metropolis in Hung Hom has Spanish dishes on the dinner buffet until the end of July. The selection includes viva Madrid chicken (cooked with bacon, onion, garlic and chilli powder), and Spanish turbot and spring vegetable soup. eatstreet@pentalounge at the Pentahotel in San Po Kong is serving a selection of Japanese and Korean dishes on the dinner buffet until July 12, featuring shabu shabu, homemade kimchi and Korean fried chicken. Stephane Carbone of the Michelin one-star L'Incognito in Normandy, France, will be guest chef at Vida Rica Restaurant at the Mandarin Oriental Macau from July 10 to 12. The four- and five-course lunch menu (HK$398 and HK$498 plus 10 per cent, respectively) and a six-course dinner menu (HK$998) include roasted sea bass with wasabi potato espuma and chorizo emulsion, and French meringue sphere with caramel mousse and apple chips.
