Veal tongue au vinaigrette at The Lounge at the Four Seasons

In a promotion from June 28 until July 6, at the Four Seasons in Central will host Nicolas Diaz of restaurant Elena from hotel's sister property in Buenos Aires. Dishes include veal tongue au vinaigrette (pictured); grilled sweetbreads with crisp new potatoes, soft egg, basil and burnt baby leek; Luis Barco 65-day dry-aged rib-eye; roast Patagonian lamb with crab humita and cachi pepper oil; and dulce de leche panqueques with vanilla ice cream (pictured). at the Grand Hyatt hotel in Wan Chai will have a dinner on June 27 featuring wines chosen by the hotel sommelier Nicolas Deneux. The five-course dinner includes a main course of Aveyron lamb saddle and white bean cassoulet with sautéed morel mushrooms, served with Caymus Special Selection 1989 from the Napa Valley and Chateau Lynch Bages 1999 from Pauillac; and Italian cheeses with Tignanello 1996 from Tuscany. restaurant at the Harbourfront Landmark in Hung Hom is serving a six-course dinner featuring Japanese fresh water fish from July 1-7. The dinner, which needs to be pre-ordered, includes Biwa trout roll with white asparagus in amazake sauce (pictured); grilled Kyushu sweetfish with Sichuan pepper; and braised masu salmon rice with sweet brown sauce.
