Homura Ramen, Yuen Long - for tonkotsu ramen five ways

Among the alfresco diners and bars popping up on Yuen Long's Kau Yuk Road, Homura Ramen stands out for its star dish: a rich bowl of tonkotsu ramen. The boutique eatery's founder and head chef, Albert Lo, spent a year in Japan's Kagawa prefecture learning how to make an authentic bowl of ramen.

The secret to Homura's winning recipe lies with the pork bone soup base. This creamy, collagen-rich broth is the result of more than 45kg of bones being stewed for more than a day, every day.

There are five varieties: traditional tonkotsu (HK$58), spicy miso tonkotsu (HK$68), seafood soy sauce tonkotsu (HK$68), truffle deluxe (HK$78) and spicy volcano (HK$78). The shop may be small but a bowl of truffle deluxe ramen makes the trek worthwhile.
