Snake soup, braised oxtail and fondue - three winter warmers

HOUSE OF TANG Chinese restaurant at the Metropark Hotel Kowloon in Mong Kok is serving warming winter dishes until the end of February. The selection includes snake soup with chrysanthemum petals; lamb brisket casserole with bamboo shoots and black mushrooms (above); pan-fried bean curd stuffed with scallop and served with crab coral sauce; sautéed seafood with egg white; and milk pudding fritters with spare ribs in sweet and sour sauce. THE CHINESE RESTAURANT at the Hyatt Regency in Tsim Sha Tsui is featuring Chinese herbal dishes until February 28. Dishes include braised oxtail with American ginseng; braised chicken with Chinese angelica, red dates and ginger; simmered fillet of garoupa with wolfberries and peppers in superior soup; and steamed sole with cordyceps (below). THE VERANDAH’S READING ROOM at The Repulse Bay is featuring fondue until March 15. The dishes include gruyere and raclette cheese fondue with saffron and sun-dried tomatoes; black truffle and champagne fondue with emmental and tilsiter cheese; and Lindt chocolate fondue with fresh fruit, brioche and marshmallows. CAFÉ EAST at the New World Millennium hotel in Tsim Sha Tsui is featuring black truffles and foie gras on the dinner buffet until the end of February. The buffet selection includes deep-fried shrimp balls stuffed with black truffle; foie gras mousse (below); and deep-fried bean curd with preserved Chinese sausage and black truffle sauce.
