A visit to the magical Butterfly Pavilion, available at MGM until the end of October, creates an opportunity to dine at the surprisingly understated Aux Beaux Arts. The room is designed to recall a 1930s French bistro, so this is no fine dining venue, although there's also the option to dine within the two-storey wine cellar.
This hotel has a serious wine list and a serious sommelier. There's the odd dollop of foam or sauce and many dishes are little pieces of art: frogs' legs balancing on a densely green asparagus veloute, or salmon on avocado topped with a sizeable, edible purple flower. But this place is mostly just about good produce and not at all fussy.
The seafood platter (pictured), is simply delicious. Steak tartare of Kobe beef is just a circle of meat on a white plate, topped with a single green leaf. Perfectly creamy risotto, topped with scallops, is on a similar white plate with just a ring of green at its edges. Highly enjoyable is Iberico pork loin served with one piece of green and one piece of white asparagus, the tips peeking out of a little roll of pasta.
