If Cantonese cuisine is the best cooking style in China, Shunde reputedly produces the best chefs in the province. With a new chef from Shunde having overhauled the menu, you can expect great things at this stylish eatery.

From delicate dim sum to Cantonese and Hakka favourites, you will be spoilt for choice. The signature dish is the poetically named fish leaping over dragon gates. Crispy prawns stuffed with kurama shrimp are accompanied by honey-coated yam balls made of Chinese yams, corn and carrots.

The millet-boiled sea cucumbers are cooked in a broth of pumpkin soup with millet and broccoli. They are said to enhance the immune system, as is the pork and apple stew.

For circulation, flower-steamed grouper is recommended. With shades of deep purple, the contemporary dining room has subtle Chinese touches and floor-to-ceiling windows.
