Opened earlier this year, Wan Li Xuan offers all your regional favourites at this stylish eatery. Situated on the 28th floor, it affords stunning views of West Lake, the East River and the scenic mountains and forests that surround Huizhou.

The emphasis is on Chiu Chow, Hakka and standard Cantonese fare. There is everything from mouthwatering dim sum to barbecued and marinated meats and more exotic fare such as abalone, fish maw, sea cucumber and bird's nest soup. The menu changes every season to focus on seasonal and vegetarian soups and dishes that are healthy.

The signature dish is tea-flavoured crispy baby pigeon - pigeon that has been simmered in white rice vinegar, red Zhejiang vinegar, yellow rice wine, eggs and star anise. Other dishes include wok-fried diced goose liver with crispy garlic flakes, stone-grilled beef ribs with herbal sauce, and wok-fried king scallop with fungi. There is a balance between Old and New World wines.
