Umberto Bombana brings his refined Italian cuisine to Macau, ensconced in a gorgeous space in the new extension at Galaxy Macau. Here gourmets have a large, comfortable dining area with banquet seating, and two private rooms, and a stunning bar decorated with Murano glassware.

The food is sophisticated and divine, thanks to executive chef Antimo Maria Merone who was previously at Michelin-starred L'Altro in Central.

For starters the marinated veal was a refreshing start paired with parmesan chips and crunchy slices of lettuce, while the seared red tuna melted in the mouth, in a tomato and citrus emulsion and finished with a dollop of caviar.

Next came the Neapolitan Ragù, only available in the Macau restaurant, which features wagyu beef and iberico pork cooked à la minute and combined with the simmering sauce presented with pappardelle.

Line-caught seabass was a delicate treat in a clam and fennel broth that was more sweet than bitter, garnished with baby asparagus. The main of French lamb, a piece of the rack and loin, both very tender, and complemented with artichoke purée that was divine.

Finally dessert was a light touch of the millefoglie, with a scoop of raspberry sorbet, berries and cream, and a chocolate combination of ice cream, mousse and crunch.
