Dealing with 'demon chef' part of the job
Adeline Grattard (above) is about to make her culinary presence felt this Mid-Autumn Festival. The chef de cuisine at BO Restaurant, on the upper ground floor of Ice House, is introducing her own 'Autumn Moon' menu. Coming from a kitchen with two Michelin stars, the Paris native is here for her love of Chinese cuisine.
'I was introduced to Chinese food very early,' Grattard explains. 'My aunt was married to a Hong Kong guy so they were cooking Chinese for me since I was a child, and I liked it very much.' Grattard's menu will be served until October 20. But what's really incredible is that after six months working with BO's 'demon chef' Alvin Leung, she hasn't tried to stab him or hop on a plane back to Paris. As anyone who's seen Leung in the open kitchen knows, he's capable of throwing wild tantrums at the drop of a spoon.
'Alvin is a person with a lot of emotion,' Grattard says diplomatically. 'Our relationship is good. I hear him and he hears me. There's no conflict, but sometimes it is difficult. I am a woman and have my moods.'
