Encompassing the mouth-numbing spices of Sichuan, the delicate dim sum of Hong Kong, the famed hairy crab of Shanghai and myriad other dishes, techniques and cuisines, Chinese food earns its reputation for taste and variety. Its history stretches back thousands of years, and it plays a major cultural role. But while steeped in tradition, Chinese food has changed through the centuries and continues to evolve. Chinese people pride themselves on eating a wide variety of foods while remaining true to the spirit of the culture. Xinhua photographer Wang Song sampled some of the best the country has to offer.
