Hailing from Tokyo’s Ginza district, Shinji by Kanesaka at City of Dreams is the first Greater China outlet by sushi maestro Shinji Kanesaka. The Edomae-style sushi is served in the omakase way, which literally means “I’ll let you decide”, as an expression of trust in the expertise of the chef.

At Shinji by Kanesaka, the two traditions have merged to denote an exclusive, intimate experience that embodies purity, harmony and tradition. Only the finest seasonal product is selected to create the sashimi, nigiri and maki that showcase the chef’s creativity, insight and culinary skills.

A passionate defender of Japanese culinary traditions, Chef Kanesaka is one of the most celebrated sushi chefs in Japan. He launched his first outlet at the age of 28 in the highly competitive Ginza district in 2000. Sushi Kanesaka has been on the Michelin list since 2008, and was one of just 22 Michelin star awarded sushi restaurants in Tokyo in 2015. It is considered a mecca for sushi, commanding a legion of fans that includes country leaders and international celebrities as well as famed Kabuki actors.

Shinji by Kanesaka at City of Dreams follows the master chef’s ethos, complete with the same delectable experience in terms of food quality, service and ambience as the original Ginza outlet. It offers one of the most exquisite culinary experiences in town, joining the ranks of Michelin-starred establishments in the Michelin Guide Hong Kong Macau 2016 after only nine months of operation.

Although Chef Kanesaka is based on Tokyo, his uncompromising style is very much present in the Macau outlet thanks to his proteges Chef de Cuisine Toru Osumi and Senior Sous Chef Kenichi Fujimoto, who oversee the day-to-day operation of the kitchen. Endowed with superb technique as much as talent, the two young chefs have inherited Chef Kanesaka’s craftsmanship – hand-making sushi from the freshest fish, rice cooked exclusively with Japanese spring water and freshly grated wasabi.

To ensure the quality of the ingredients, Chef Kanesaka personally selects fish and seafood at Tsukiji Market every day and has them flown out directly to Macau up to five times a week.

Diners may also get to meet him on his occasional visits such as the gala dinners held on 1 and 2 June, during which he presented two painstakingly crafted menus, paired alongside Takacho Sake from Yucho Shuzo. The 13th generation of the venerable brewery, Yamamoto Yoshihiko, also attended, giving guests a unique opportunity to learn about sake and sushi pairing.

Greeting guests at the entrance of Shinji by Kanesaka is a popping, multi-coloured artwork picturing Chef Kanesaka amidst a sea of smiling flowers, a gift from internationally acclaimed contemporary artist Murakami Takashi. The anime art adds a youthful, humorous element against the otherwise quietly elegant decor by designer Junzo Irikado. The sushi counter, on the other hand, has been crafted from a 220-year-old Japanese cypress. It is there that the guests’ delightful omakase journeys begin.
