LG/F, 97 Wellington Street, Central. Tel: 2810 6969. So exclusive it's almost secretive, this club's black wooden floors and secluded booths lend themselves to privacy. Recommended: its premium spirits.
2/F Chater House, 8 Connaught Road, Central. Tel: 3583 2828. The 5,000-sq-ft terrace is the star of the show at the sister bar to Armani/Aqua restaurant; take in the views from cosy, candlelit seating. Not so impressed by the signature cocktails, the classy wine and spirits selection more than compensated. Recommended: Dom Perignon Oenotheque 1996 (HK$5,200 a bottle).
5/F Mody House, 30 Mody Road, TST. Tel: 2724 3828. A Tokyo-style drinking den favoured by Japanese customers. The focus is on the bar staff and their reverentially served liquors that include a huge whisky list. Recommended: the 10-year original cask-aged Laphroaig (HK$80).
Man Hing Lane (off Hollywood Road), Central. Tel: 2858 7071. A mellow haunt with a good range of beers and cocktails but leave the wines alone. A perfect place for casual drinks. Recommended: Amaretto sour.
77 Wyndham Street, Central. Tel: 2520 5818. This slightly dark but definitely cosy nook moves from escape to midnight dance floor. Take advantage of excellent happy hour offers on champagne and cocktails such as the Penicillin (Scotch, lemon, honey and ginger). Recommended: Grimbergen draught (HK$65), an orangey, toffee-flavoured Belgian beer.

0005. What could beat an unpretentious atmosphere in a prominent SoHo spot? The extensive drinks list that includes many champagnes, wines and cocktails is a strong lure but the wines are generally a safer bet than the cocktails. Recommended: the Domaine Magellan Merlot 2007 (HK$70).
G/F, 24-30 Ice House Street, Central. Tel: 2810 9902. A sleek interior, bass-heavy sounds and eye-catching visual effects make for a serious clubbing experience but also mean spending serious money. The small number of beers is made up for by the ever-changing range of premium spirits and house-infused vodka- based cocktails. Recommended: the Sawaadini lemon grass and kaffir lime vodka with ginger and chilli.
Garley Building, 45-53 Graham Street, Central. Tel: 2543 1941. The Globe is a smart English pub, with one of the widest and best selections of beers in Hong Kong, as well as excellent pub fare. Recommended: Typhoon T8, which is brewed on Lantau Island.
G/F, 13-15 Lan Fong Road, Causeway Bay. Tel: 2577 7981. Made internationally famous by its role in a Wong Kar-wai film, it has been serving Hong Kong-style diner classics since 1962. It has kept its charms and its provision of privacy in comfortable booths for all that time. Recommended: any of the classic cocktails.
Shop A, 101/F International Commerce Centre, 1 Austin Road West, Kowloon. Tel: 2972 2666. Once found, this quiet bar with glorious views is a tranquil spot for conversation. Cocktails blend Canadian ice wines with Japanese spirits and plenty of fruit, and the wine and shooters are pretty good too. Recommended: the blend of ice wine, Yoichi whisky, cranberry juice and lemon called a Maple Route.
G/F The Landmark Mandarin Oriental, 15 Queen's Road Central. Tel: 2132 0077. This fashionable hangout spread over two levels offers some impressive signature cocktails. Recommended: the Asian Mind MOtini, with premium gin, muddled ginger, pink grapefruit and fresh lime juice.
118/F Ritz-Carlton Hong Kong, International Commerce Centre, 1 Austin Road West, Kowloon. Tel: 2263 2263. The highest bar in the world doesn't disappoint with its bird's-eye view of the city. Prices here are as steep as the venue, but then you're paying for that view. Recommended: wines are the main attraction, with a choice of several by the glass.
62 Johnston Road, Wan Chai. Tel: 2866 3444. Relax at the beautifully restored historic building with natural light, low leather couches and a beautifully calm atmosphere. Recommended: Leffe Brune.
M88, 7/F, 2-8 Wellington Street, Central. Tel: 2868 3762. An East Village-style pool bar, this members' club remains the coolest place in town to shoot a few balls. Recommended: when in a Manhattan-style bar, one must order the Manhattan.
43-55 Wyndham Street, Central. Tel: 2840 1955. Settle in for a chat if you're early enough and watch the passing parade on Wyndham Street. Later on, the lounge or house music amps up and this part of town becomes a place in which to see and be seen. Recommended: the Chocolate Rayne (HK$85), which blends house-made chocolate sauce with vodka and whiskey and then tops it off with Frangelico and chocolate liqueur.
Salon de Ning
B/F The Peninsula, Salisbury Road, Tsim Sha Tsui. Tel: 2315 3355. Hidden away in the basement of the Peninsula is this glamorous slice of 1930s Shanghai, inspiring a feeling of intrigue and mystery. Recommended: the Manhattan (HK$115), using Jim Beam rather than rye whiskey.
25/F Prince's Building, 10 Chater Road, Central. Tel: 2537 1388. Indoor and (spacious) outdoor seating gives Sevva a nice edge, particularly given the incredible skyscraper views. Recommended: at Sevva it's the desserts which will steal your heart.
18/F Sheraton Hong Kong Hotel & Towers, 20 Nathan Road, Tsim Sha Tsui. Tel: 2369 1111. A welcome relief from the bustle below, the bar has a glamorous 1950s feel and is an elegant eyrie to recharge batteries - either self-served wines from the Enomatc machine or with classic martinis and Chivas Regal 18. Recommended: the kiwi martini ((HK$95), a show-stopping blend of vodka, kiwi liqueur and kiwifruit syrup.
The Centrium, 60 Wyndham Street, Central. Tel: 3162 3710. This upbeat bar is packed at the weekends, when people come for dancing, cocktails and shooters. The bar handles the classics well and that makes for a full-on night out. Recommended: the Mud Slide, a HK$80 mix of vodka, Kahlua, Baileys and vanilla ice cream.
Tai Lung Fung
G/F, 5 Hing Wan Street, Wan Chai. Tel: 2572 0055. A small bar offering a dose of nostalgia and a great happy hour. Cocktails try hard but can be hit and miss. Recommended: whisky sours (HK$45 hh/HK$60 regular).
Tott's and Roof Terrace
34/F, The Excelsior hotel, 281 Gloucester Road, Causeway Bay. Tel: 2837 6786. A glamorous hotel rooftop bar as suitable for business entertaining as for romantic soirees. An extensive list is heavy on the cocktails and wines but we were happiest with a 10-year-old port. The happy hour is good value. Recommended: Moonlight Lychee Blossom, a mix of vodka, elderflower, lemon and champagne (HK$98).
5/F Mira Hotel, 118 Nathan Road, Tsim Sha Tsui. Tel: 2368 1111. The secluded alfresco bar is very relaxed. A few twists on classic cocktails enliven a list that is heavy on whiskies but also includes premium vodkas and rums. There are also shisha and cigar menus. Recommended: the S&M (Scotch and mint, HK$90).
LG/F, 62 Jervois Street, Sheung Wan. Tel: 2857 7683. A pink nightclub with a loyal following for its eclectic music. Stiff cocktails are a strong feature, although the chrysanthemum martini was a little medicinal. Recommended: Strawberry Mini Boom champagne cocktail (HK$120).
1 Austin Road West, Kowloon Station, Kowloon. Tel: 3717 2222. Hip decor, skilful, friendly staff and eclectic cocktails go some way towards disguising the hotel bar vibe. For cocktail lovers. Recommended: the Elderflower Diablo (HK$105).
