You sold your house to buy a farm so you could grow fresh ingredients. Do you enjoy working on the land? 'I do work with nature. For example, tomatoes are very important in our cooking and we must respect the seasons. A tomato picked in May is one thing; those grown in September are another. Each season demands a different cooking method.

Dished Up

The Phoenix on Shelley Street is holding a wine dinner tomorrow hosted by Cristobal Parada of Cousino-Macul winery in Chile. The three-course meal includes a choice for main course of lasagne alla Bolognaise or spinach and ricotta cheese ravioli, paired with two Cousino-Macul wines - the Cabernet Sauvignon Antiguas Reservas 2003 and Finis Terrae 2002. The dinner is $335 plus 10 per cent.

Little Italy

Biella Club, a northern Italian 'open kitchen concept dining club' (as the website says), opened recently in Tsim Sha Tsui (near the Hyatt Regency) by chef Giancarlo Zoccoletto (right). The intimate, 30-seat club (guests must register as members) is open for dinner only. Zoccoletto says the menu changes three to four times a week according to the availability of ingredients.

The Go Go Cafe was recommended by two friends within one week. Both said they'd heard the restaurant's Japanese pancakes were excellent but neither had been able to taste them because they were sold out.

Food & wine

Several restaurants in Lan Kwai Fong are participating in tomorrow (December 1) night's 'See and Be Seen' charity event which benefits Lifeline Express. The charity takes volunteer doctors to poverty-stricken areas on the mainland to perform operations on patients with cataract-related blindness. A portion of the proceeds from each restaurant will be donated to Lifeline Express.
