Fried fish tacos

I'll be on holiday in southern California next week, where I'll feast on Mexican food. One of my favourite taquerias is El Taco Nazo, which specialises in Ensenada-style fried fish tacos. This is my attempt at replicating that dish.

6-8 corn tortillas, about 15cm in diameter

200 grams green head cabbage, finely shredded

Harbour lights

Tai Mei Tuk is only a short bus ride from bustling Tai Po Market MTR station, but is a long way from its pace. Situated beside Tolo Harbour and not far from the picturesque Plover Cove Reservoir, it is a popular spot for barbecue day-trippers, cyclists, boating enthusiasts and amateur anglers.

Mexican munchies

The quesadilla is one of the first 'international' snacks I remember learning to make. When my brothers and I got home from school, we would have things such as instant noodles, rice crackers and dried cuttlefish - snacks that Asian children around the world seem to eat.

Ear splitting

You probably won't be tempted to taste a vegetable called 'corn smut', so let's use its Mexican name, huitlacoche (or cuitlacoche). It's a fungus that infects ears of corn - in other words, it's somewhat like a mushroom.

Simple pleasures

Monterey Jack isn't the type of cheese you'll find on the cheese board of a Michelin-starred restaurant, nor is it something any connois-seur would wax rhapsodic about. It's a cheese that can be appreciated (in its own way) for its simplicity: it's a mild, straightforward cheese without any complex flavours.

A slice of Mexico

A quesadilla is a Mexican sandwich using tortillas, which are made from flour or corn and look like big, soft pancakes. It can be served as an appetiser, snack or as a light lunch.

This is a basic recipe, but you can add other ingredients such as chicken, sweetcorn, red peppers, mushrooms or ham.

Chickpeas with tomatoes & chorizo

When I have plenty of time to cook and can plan well enough in advance, I use dried beans for my dishes because I like the taste and texture. But I also usually keep a can or two of chickpeas in my pantry for the times when I need a quick dish. They're versatile and can be made into hearty soups and stews.

All rise

I rarely eat breakfast, but when I do, I almost always choose something savoury. These two dishes are hearty but a little time-consuming (although not difficult), so are better reserved for a leisurely weekend.
