A cutlet above the rest

Happy Saint David's Day. Today is the feast day of the patron saint of Wales and a fitting time to write about Welsh lamb - revered in Britain and gaining the same status in Hong Kong.

Respected chefs in Britain including Jamie Oliver, Richard Corrigan and Mark Hix are all fans, and Welsh lamb is cropping up on menus all over the city.

Lee Ho-yan

Lee Ho-yan is conscious about staying slender. She keeps a keen eye on what she eats - usually light, healthy fare with more vegetables than meat - and is careful not to overeat. But when it comes to good food and special occasions, Lee will gladly indulge once in a while and then go back to her disciplined diet.

Love me tender

If a cattle rancher or pig farmer could find a way to raise his animals so they consisted solely of steaks and chops, he would be ecstatic. Tender cuts of meat are the most popular - and the most profitable - because they're easy and quick to cook.

Serious steaks

Morton's of Chicago

Sheraton Hong Kong Hotel & Towers, 4th Level, 20 Nathan Road, TST, 2732 2343

Fare Old American. What better way to attract revenue than a big name taking over a hotel's prime restaurant space. British chef Gordon Ramsay did it with Claridges in London. Serious steak lovers can find a balance between tradition and modern-day flair.

24 Apr 2008 - 12:00am

Meat and greet

Meat on the bone - especially racks - can make impressive dinner-party fare but they should be served only to good friends, not stuffy guests. As every carnivore knows, the best meat is closest to the bone and you don't want to attract snooty stares when you pick up the ribs and start gnawing on them.
