Bamboo clams, also called razor clams, are long and slender, with very sweet, tender meat. If possible get the vendor to clean the clams.

For the salsa

This vegan salsa isn't your regular salsa. In fact, it contains no tomatoes, but 80 per cent roasted capsicum. Blended with Turkish herbs and spices and a touch of chilli, it's richly coloured, flavoured and textured - and thoroughly addictive.

The fish in this dish is basically raw, so it's important to buy it from a dependable source, such as Fresh Mart (in the basement of Sogo, Causeway Bay), Apita (in Taikoo Shing), City'super (various locations) or Great (in Pacific Place). Choose a piece that's about 6cm wide and 2cm thick. I like to serve this as a starter, along with Japanese pickled cucumber and wakami seaweed.

Plate bloomer

I love ripe, buttery avocado so much that I occasionally make a meal out of one (lightly mashed, sprinkled with salt and then spread on bread, it makes a delicious, easy sandwich). I like avocado shakes and guacamole, but the fatty richness of the fruit is sometimes better suited to a supporting role. It is particularly good with lean meats and seafood.

Cooking for children isn't easy - they can be such picky eaters (and unfortunately some of them grow up to be picky adults). Youngsters tend to like simple foods and basic flavours, so save those burgundy-braised beef cheeks for your adult friends. Try these easy dishes out on your offspring and you may not have to rely on boxes of frozen fish fingers and chicken nuggets.

Perfect catch

Seafood dishes are ideal for summer because they need little cooking. If seafood is overcooked, it becomes dry and tough. The first two dishes here each take about 15 minutes to prepare; the crab cakes take longer because they need time to chill in the fridge. None of these dishes will heat up the kitchen during preparation.

Dip in
