If you thought the only Sichuan culinary export was chillies, think again. There is a Sichuan dish commonly cooked all across the mainland, and by Chinese cooks worldwide - yuxiang qiezi, or "eggplant with the fragrance of fish".

Made for each other

Eggplant and tomato is a classic combination used throughout the Mediterranean. It shows up in dishes such as ratatouille in France, moussaka in Greece and caponata in Italy. That the two vegetables (which are actually fruit) are paired together so frequently shows their natural flavour affinity: the eggplant becomes soft and melting when cooked, soaking up the sweet acidity of the tomatoes.

Keen for aubergine

Eggplant is like a sponge - it absorbs the flavours of whatever ingredients are cooked with it. Unfortunately, it's also notorious for soaking up oil. In some eggplant dishes, a generous amount of oil can be a positive thing - it gives the fruit a wonderfully silky texture.
