Valencian tradition a healthy alternative to fried rice

Perfect Match

The classic dish of fried rice with conpoy is an example of texture extension and flavour note layering. The egg white and slightly chewy rice grains are similar in texture, while the addition of shredded conpoy (dried scallops) gives a salty, savoury depth and - in some versions - provides a slightly crunchy contrast.
