California, dreaming?

The scene is classic cowboy country. You can almost hear the wind parching your skin. The trail is rocky, the vegetation sparse. A lone golden eagle circles in the cloudless sky. Only one thing wrong, pardner: what in heck are them there palm trees doing in the distance? An oasis? Huh? With no camels or sand dunes?

Last week, I was a wine judge at California's Sonoma County Harvest Fair. At 8am on a foggy Santa Rosa day,

I duly donned my white lab coat, introduced myself to the judging panel and waited for the pouring team to bring in our first flight of wines.

The right wine

As a general rule, pair red wine with hard, aged cheese, and white wine with soft, milder cheese. The most important thing is to avoid pairings where one overpowers the other. A good idea is to match cheese and wine from the same region:

Comte + Beaujolais or Burgundy;

Parmigiano Reggiano + Chianti, Chardonnay, Sauvignon Blanc or Riesling;
