There's nothing subtle about the lemon - the colour is bright and sunny and so is the flavour. I depend on the fruit more than any other because it perks up both sweet and savoury dishes.

and takes a bit of muscle. Unless you're grating a large quantity of food, however, it usually

isn't worth the effort of using a food processor with grating attachments - and all the cleaning that entails.

If you ask most cooks which fruit they use most in the kitchen, it would probably be the lemon. The juice and zest of the astringent fruit can be used in sweet and savoury dishes.

Season: lemons are easy to find year-round.
